Ingredients

For the Apple Filling
  • 4 medium medium apples (peeled, cored, and diced) Use firm varieties like Granny Smith or Honeycrisp.
  • 1/4 cup brown sugar
  • 1 tbsp ground cinnamon
  • 1/4 tbsp ground nutmeg
  • 1 tbsp lemon juice
For the Taquitos
  • 8 small flour tortillas
  • 2 tbsp unsalted butter Melted for brushing.
For the Cinnamon Sugar
  • 1 tbsp granulated sugar
  • 1 tbsp ground cinnamon

Method

Prepare the Apple Filling
  1. In a medium saucepan, combine the diced apples, brown sugar, ground cinnamon, ground nutmeg, and lemon juice.
Cook the Apples
  1. Cook over medium heat, stirring occasionally, until the apples become tender and the mixture is syrupy—about 10 minutes. Once done, remove from heat and allow to cool slightly.
Preheat Your Air Fryer
  1. Set your air fryer to 375°F (190°C).
Fill and Roll the Tortillas
  1. Place 2-3 tablespoons of the apple mixture in the center of each tortilla.
  2. Roll them up tightly and place them seam-side down in the air fryer.
Prepare for Air Frying
  1. Brush each taquito with melted butter, ensuring they are well coated.
  2. In a small bowl, mix granulated sugar and ground cinnamon. Generously sprinkle this mixture over the taquitos.
Air Fry the Taquitos
  1. Place the taquitos in the air fryer basket in a single layer, making sure they don't touch. Air fry for 6-8 minutes, turning halfway through, until they are golden brown and crispy.
Serve
  1. Drizzle with caramel sauce if desired, and serve warm.

Notes

Make sure not to overfill the tortillas, as this can lead to leakage during cooking. You can also customize with chocolate chips or different fruit fillings such as cherries.
