Preparation
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, apple pie spice, and salt.
- In a separate bowl, whisk together the apple cider, sugar, vegetable oil, and eggs until well combined.
- Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix.
- Fold in the finely chopped apples.
Baking
- Evenly divide the muffin batter among the prepared muffin cups.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool slightly before enjoying your muffins with a hot cup of coffee.
Notes
Store leftovers in an airtight container at room temperature for up to three days, or freeze for up to three months. For enhanced flavor, add a teaspoon of vanilla extract to the wet ingredients.
