Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.25 cups sugar
  • 0.5 cups unsalted butter, melted
Cheesecake Filling
  • 4 packages (8 oz) cream cheese, softened
  • 1 cups sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
Apple Layer
  • 4 cups peeled and sliced apples
  • 1 teaspoon cinnamon
  • 0.5 cups brown sugar
Streusel Topping
  • 1 cup flour
  • 0.5 cups rolled oats
  • 0.25 cups unsalted butter, melted
  • 0.5 cups brown sugar

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until crumbly and then press the mixture into the bottom of a 9-inch springform pan.
  3. In a large bowl, beat the softened cream cheese with 1 cup sugar until smooth. Add in the vanilla and eggs one at a time, mixing well after each addition.
Assembly
  1. Pour half of the cream cheese filling over the crust.
  2. In another bowl, combine the sliced apples with cinnamon and brown sugar; spread this mixture evenly over the cream cheese layer.
  3. Then pour the remaining cream cheese mixture on top.
  4. In a different bowl, mix flour, oats, brown sugar, and melted butter to create the streusel topping. Sprinkle this over the cheesecake.
Baking
  1. Bake for about 1 hour, or until set.
  2. Once baked, allow the cheesecake to cool completely before refrigerating for at least 4 hours or overnight prior to serving.

Notes

Store in the refrigerator in an airtight container for up to a week or freeze for up to three months. Allow to thaw in the fridge overnight before serving.
