Ingredients
  

For the crust
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
For the cheesecake filling
  • 8 oz cream cheese, softened Make sure it’s at room temperature for smooth mixing.
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs
For the apple topping
  • 2 cups apples, peeled and diced
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 cup rolled oats
  • 1/4 cup flour
  • 1/4 cup butter

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine the graham cracker crumbs, sugar, and melted butter until well-mixed. Press this mixture firmly into the bottom of a muffin tin lined with cupcake liners.
  3. In another bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time, mixing thoroughly after each addition.
  4. Pour the cream cheese mixture over the prepared graham cracker crust in each muffin liner.
  5. Prepare the apple topping by mixing diced apples, brown sugar, cinnamon, oats, flour, and butter in a separate bowl.
  6. Spoon the apple mixture generously over the cheesecake filling.
Baking
  1. Bake for 20-25 minutes or until the cheesecakes are set.
  2. Once baked, allow them to cool before refrigerating for at least 2 hours before serving.

Notes

For a delightful serving, pair with whipped cream or caramel drizzle. Store in an airtight container in the refrigerator for up to a week or freeze for a month.
