Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, combine the graham cracker crumbs, sugar, and melted butter until well-mixed. Press this mixture firmly into the bottom of a muffin tin lined with cupcake liners.
- In another bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time, mixing thoroughly after each addition.
- Pour the cream cheese mixture over the prepared graham cracker crust in each muffin liner.
- Prepare the apple topping by mixing diced apples, brown sugar, cinnamon, oats, flour, and butter in a separate bowl.
- Spoon the apple mixture generously over the cheesecake filling.
Baking
- Bake for 20-25 minutes or until the cheesecakes are set.
- Once baked, allow them to cool before refrigerating for at least 2 hours before serving.
