Ingredients

For the Cupcakes
  • 1.5 cups all-purpose flour
  • 0.5 cups granulated sugar
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cups unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 cups milk
  • 1 cups apple compote Can also use diced apples cooked with sugar and cinnamon
For the Frosting
  • 0.5 cups cream cheese, softened
  • 0.25 cups powdered sugar
  • 1 teaspoon cinnamon

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In one bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate large bowl, beat the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing in the vanilla afterward.
  4. Gradually incorporate the dry ingredients into the wet mixture, alternating with the milk until combined.
  5. Fill each cupcake liner halfway with the batter, place a spoonful of apple compote in the center, and top with more batter until three-quarters full.
  6. Bake the cupcakes for 18-20 minutes, or until a toothpick inserted comes out clean. Allow them to cool completely.
Frosting
  1. While the cupcakes cool, prepare the frosting by beating the cream cheese and powdered sugar until smooth, then mix in the cinnamon.
Serving
  1. Once cooled, pipe or spread the cinnamon cream cheese frosting generously on top of the cupcakes. Enjoy!

Notes

Serve with a sprinkle of cinnamon sugar, vanilla ice cream, or caramel sauce. Experiment with different apple types for unique flavor. Involve kids in the frosting stage for a fun activity.
