  • 1-2 sheets Puff pastry sheets, thawed if frozen Use butter-based for best flavor.
  • 1 small wheel or wedge Brie cheese Rind left on or trimmed slightly.
  • 1 cup Cranberry sauce or whole-berry cranberry jam About 1 cup total for a sheet or two.
  • 1 large Egg Beaten with a splash of water for egg wash.
  • optional Fresh rosemary Finely chopped or small sprigs for garnish.

Preparation
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Unfold the puff pastry on a lightly floured surface and roll gently to smooth seams and make an even thickness.
  3. Cut the pastry into equal squares (about 2½–3 inches), aiming for 12–16 squares per sheet.
  4. Place a small wedge or cube of Brie in the center of each square, trimming the rind if necessary.
  5. Top the Brie with a teaspoon or so of cranberry sauce; adjust the amount for preference.
  6. Fold the four corners of the square toward the center and pinch lightly to seal.
  7. Brush each bite with the beaten egg for a golden finish.
Baking
  1. Arrange the bites on the prepared sheet, spaced to allow puffing and bake for 15–20 minutes.
  2. Remove and let cool for 5 minutes before serving. Garnish with chopped rosemary.

Notes

These bites are best enjoyed fresh from the oven but can be assembled ahead of time and stored in the refrigerator. For variations, consider other jams or cheeses.
