Main Ingredients
  • 1 block Feta cheese Opt for high-quality feta for the best flavor.
  • 4 large Eggs
  • 2 tablespoons Olive oil
  • 1 cup Cherry tomatoes
  • 2 cups Fresh spinach Feel free to swap out for other greens.
  • 2 cloves Garlic Minced.
  • to taste Salt
  • to taste Pepper
  • to taste Herbs (such as oregano or basil) Experiment with different herbs for flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a baking dish, drizzle olive oil, then add feta cheese and cherry tomatoes.
  3. Bake in the oven for about 10 minutes until the cheese softens.
  4. Remove from oven and crack eggs on top of the feta and tomatoes.
  5. Sprinkle with minced garlic, salt, pepper, and herbs of your choice.
  6. Return to the oven and bake for another 10-15 minutes until the eggs are set.
  7. Serve warm, garnished with fresh spinach.

Notes

Serve directly from the baking dish for a rustic look, and pair with crusty bread or warm pita for dipping. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
