Preparation
- Preheat the oven to 350°F (175°C).
- In a baking dish, drizzle olive oil, then add feta cheese and cherry tomatoes.
- Bake in the oven for about 10 minutes until the cheese softens.
- Remove from oven and crack eggs on top of the feta and tomatoes.
- Sprinkle with minced garlic, salt, pepper, and herbs of your choice.
- Return to the oven and bake for another 10-15 minutes until the eggs are set.
- Serve warm, garnished with fresh spinach.
Notes
Serve directly from the baking dish for a rustic look, and pair with crusty bread or warm pita for dipping. Leftovers can be stored in an airtight container in the refrigerator for up to three days.
