Preparation
- In a large pot, heat the olive oil over medium heat.
- Add the beef chunks and brown them on all sides for about 6-8 minutes.
- Remove the beef and set it aside. In the same pot, add the chopped onion and minced garlic, sauté until the onions are translucent.
Cooking
- Return the beef to the pot, pour in the beef broth, and then add the diced potatoes, sliced carrots, tomato paste, thyme, rosemary, salt, and pepper.
- Bring everything to a boil. Reduce the heat, cover the pot, and let it simmer on low for 6-8 hours, or until the beef is tender and flavorful.
- Adjust the seasoning as needed before serving hot.
Notes
Best served with crusty bread or a fresh green salad. Can include creative twists like adding red wine or mushrooms for additional flavor.
