Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the beef chunks and brown them on all sides for about 6-8 minutes.
  3. Remove the beef and set it aside. In the same pot, add the chopped onion and minced garlic, sauté until the onions are translucent.
Cooking
  1. Return the beef to the pot, pour in the beef broth, and then add the diced potatoes, sliced carrots, tomato paste, thyme, rosemary, salt, and pepper.
  2. Bring everything to a boil. Reduce the heat, cover the pot, and let it simmer on low for 6-8 hours, or until the beef is tender and flavorful.
  3. Adjust the seasoning as needed before serving hot.

Notes

Best served with crusty bread or a fresh green salad. Can include creative twists like adding red wine or mushrooms for additional flavor.
