  • 1 cup Biscoff cookie butter
  • 1 cup oats
  • 1/2 cup brown sugar
  • 1/2 cup all-purpose flour Can substitute for whole wheat flour for added fiber.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter (softened) Make sure it is softened properly.
  • 1 teaspoon vanilla extract
  • 1 unit egg

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and brown sugar until smooth.
  3. Beat in the egg and vanilla until well combined.
  4. Stir in the Biscoff cookie butter.
  5. In another bowl, combine the oats, flour, baking soda, and salt.
  6. Gradually mix the dry ingredients into the wet mixture, stirring until just combined.
  7. Drop rounded tablespoons of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are golden.
  9. Let cool before serving.

Notes

Store in an airtight container at room temperature for up to a week. For freezing, let cool completely before placing in a freezer-safe bag or container. Add nuts or chocolate chips for extra crunch.
