Preparation
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a large bowl, mix together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add in the eggs, milk, oil, and vanilla extract, mixing until smooth.
- Slowly stir in the boiling water until the mixture is well combined (it will be thin).
- Pour the batter evenly into the prepared cake pans.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
Assembly
- Once cooled, slice each cake layer in half horizontally, creating four layers in total.
- Whip the heavy cream with powdered sugar until soft peaks form.
- Place one layer of cake on a serving platter, spread a layer of whipped cream, and top it with cherries.
- Repeat with the next two layers, finishing with the final cake layer on top.
- Cover the entire cake with the remaining whipped cream and garnish with chocolate shavings.
- Refrigerate the cake for at least one hour before serving.
Notes
For best results, use room temperature ingredients. Don’t skip the whipping of cream for a fluffy texture. Consider drizzling reserved cherry juice over cake layers for added flavor.
