Ingredients
  

For the Blackberry Filling
  • 4 cups fresh blackberries, rinsed and well-drained
  • 3/4 cup granulated sugar (for the berries)
  • 1 tablespoon lemon juice brightens the fruit
For the Batter
  • 1 cup all-purpose flour (or a 1:1 gluten-free flour blend) Use gluten-free blend if needed.
  • 1 cup granulated sugar (for the batter)
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup whole milk (or your favorite dairy-free milk) Substitute with almond or oat milk for dairy-free.
  • 1/2 cup unsalted butter, melted (or melted coconut oil / vegan butter)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Butter a 9x13-inch baking dish.
  2. In a medium bowl, toss the blackberries with 3/4 cup sugar and 1 tablespoon lemon juice. Let sit while you prepare the batter.
  3. In a large bowl, whisk together the flour, 1 cup sugar, baking powder, and salt.
  4. Stir in the milk and melted butter until just combined. Do not overmix.
Assembly and Baking
  1. Spread the blackberry mixture evenly in the prepared dish.
  2. Drop spoonfuls of the batter over the berries. It won’t cover all the fruit.
  3. Bake for 45-50 minutes until the top is golden and a toothpick inserted into the batter comes out clean.
  4. Let the cobbler cool for 10-15 minutes before serving.

Notes

For variations, you can use a mix of berries or add spices like cinnamon. Refrigerate leftovers for up to 4 days.
