Berries
  • 2 cups fresh blackberries (or frozen; do not thaw) If using frozen berries, add 5–10 minutes to baking time.
  • 1/2 cup sugar For tossing with the berries.
Batter
  • 1 cup sugar For the batter.
  • 1 cup all-purpose flour
  • 1 cup milk Whole milk preferred; low-fat works too.
  • 1/2 cup butter, melted Unsalted preferred.
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish.
  2. In a bowl, toss the blackberries with 1/2 cup sugar and let them sit while you prepare the batter.
  3. In a second bowl, whisk together the flour, remaining 1/2 cup of sugar, baking powder, and salt.
  4. Add the milk, melted butter, and vanilla to the dry mix; stir until just combined.
Baking
  1. Pour the batter into the prepared dish and smooth the top gently.
  2. Spoon the sugared blackberries and any juices over the batter. Do not stir.
  3. Bake for 45–50 minutes, until the top is golden and a toothpick comes out clean or with a few moist crumbs.
Serving
  1. Cool for 10–15 minutes before serving.

Notes

For a richer flavor, use buttermilk or add 1 tablespoon lemon juice to the milk. This cobbler shines warm, served with vanilla ice cream or whipped cream.
