Blackberry Cobbler Bars

Ingredients
  

Crust and Topping
  • 2 cups all-purpose flour
  • 2/3 cup granulated sugar
  • 1 cup unsalted butter, softened to room temperature
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
Filling
  • 2 cups fresh blackberries

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang to lift the bars out later.
  2. In a large bowl, cream the softened butter, granulated sugar, and vanilla until smooth and slightly fluffy.
  3. Add the flour and salt. Mix until the dough resembles coarse crumbs. Reserve one-third of the dough (set it aside in the bowl).
  4. Press the remaining two-thirds evenly into the bottom of the lined pan to form the crust.
  5. Scatter blackberries evenly over the crust.
  6. Crumble the reserved dough over the blackberries in an even layer.
Baking
  1. Bake for 35–40 minutes, until the top is golden brown and the fruit filling is bubbling in the center.
  2. Cool completely in the pan, then use the parchment overhang to lift the bars out. Slice into bars once fully cooled.

Notes

Serve warm with vanilla ice cream or dust with powdered sugar for brunch. Store in an airtight container for up to 2 days or refrigerate for longer life. Can be made gluten-free or with mixed berries.
