Ingredients
  

For the Panini
  • 2 slices Panini bread (ciabatta or sourdough) Any sturdy bread that can hold up under heat.
  • 2-3 tablespoons Goat cheese (plain chèvre) Softened for easy spreading.
  • a small handful Fresh basil leaves Adds peppery flavor.
  • a small handful Blueberries Rinsed and drained.
  • to taste Olive oil For brushing the bread.
  • to taste Salt Freshly cracked black pepper optional.

Method
 

Preparation
  1. Preheat your panini press or a heavy skillet/grill pan over medium-high heat. Lightly oil the plates or pan to prevent sticking.
  2. Spread a generous layer of goat cheese on one slice of bread.
  3. Top with fresh basil leaves and evenly scatter blueberries over the basil.
  4. Sprinkle a pinch of salt and freshly ground black pepper over the fruit.
  5. Close the sandwich with the second slice of bread and brush both outer sides with olive oil.
Grilling
  1. Place the sandwich in the panini press and grill until the bread is deeply golden and crisp and the goat cheese is slightly warmed, about 3-5 minutes.
  2. If using a skillet, press the sandwich with a heavy pan or foil-wrapped brick and flip once, cooking 2-3 minutes per side.
  3. Remove from heat, let it rest a minute, then slice and serve warm.

Notes

Best served warm. Pair with a simple arugula salad, chilled cucumber soup, or a light tomato gazpacho.
