Ingredients
  

Crust and Crumble Topping
  • 1.5 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.125 teaspoon salt
  • 1 stick cold salted butter, cubed Can use unsalted butter with added pinch of salt.
  • 1 large egg
Filling
  • 2 cups blueberries About 1 pint.
  • 0.75 cup sugar Divided: 1/2 cup for crust, 1/4 cup for filling.
  • 0.125 cup lime juice About 2 tablespoons; can substitute with lemon juice.
  • 2 teaspoons cornstarch

Method
 

Preparation
  1. Preheat the oven to 375°F. Butter a 9"x9" glass baking dish and set it aside.
  2. In a mixing bowl, whisk together the flour, 1/2 cup sugar, baking powder, and salt.
  3. Add the cubed cold butter and the egg. Use a fork or pastry cutter to work the butter into the dry ingredients until the mixture resembles a coarse crumble.
  4. Press half of the crumb mixture firmly into the bottom of the prepared baking dish to make the base.
Filling
  1. In another bowl, whisk together lime juice, 1/4 cup sugar, and cornstarch until smooth. Toss the blueberries in this mixture until evenly coated.
  2. Spread the blueberry mixture evenly over the pressed crust.
Topping and Baking
  1. Scatter the remaining crumb mixture over the blueberries, covering most but leaving some berries peeking through.
  2. Bake for 45-50 minutes, until bubbly and golden brown. Rotate the pan halfway through if your oven bakes unevenly.
Cooling
  1. Cool completely before slicing. Refrigeration overnight makes the neater slices.

Notes

Bars can be served at room temperature or slightly chilled. Serve with ice cream, whipped cream, or a drizzle of crème fraîche for a delightful finish. Keep the butter cold for the best texture.
