Ingredients
  

For the crust
  • 1 package graham crackers (about 9–10 full crackers, crushed) For a nuttier crust, replace up to 1/4 cup with finely ground almonds or walnuts.
  • 1/2 cup melted butter
For the filling
  • 2 cups fresh blueberries (or frozen, thawed and drained) Ensure to drain well if using frozen blueberries.
  • 1 cup whipped cream (stabilized is best; canned works too) Use stabilized whipped cream for best results.
  • 1/2 cup sugar Reduce to 1/3 cup if berries are sweet.
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Crush graham crackers finely and combine the crumbs with the melted butter in a bowl until moistened.
  3. Press the crumb mixture firmly into the bottom of a 9x9-inch baking dish to form an even crust.
  4. In a separate bowl, stir the blueberries with the sugar, whipped cream, and vanilla until combined.
Baking
  1. Pour the blueberry mixture over the prepared crust and spread into an even layer.
  2. Bake for 20–25 minutes until the berries are bubbly and the top looks set.
Cooling and Chilling
  1. Cool on a wire rack until room temperature, then chill in the refrigerator for at least 1 hour before slicing into bars.

Notes

For serving, dust with powdered sugar or drizzle with warmed lemon curd. Store covered in the refrigerator for up to 3–4 days. To freeze, wrap individual slices in plastic and foil, freeze up to 1 month.
