  • 1 pound ground beef (80/20) provides good flavor and juiciness
  • 1 tablespoon taco seasoning store-bought or homemade
  • 8 small taco shells hard or soft, based on preference
  • 1 cup shredded cheese cheddar or American melts well
  • 1 cup shredded lettuce
  • 1 medium tomato, diced
  • to taste Pickles, sliced optional
  • to taste Ketchup and mustard for serving

Method
 

Cooking the Beef
  1. Heat a skillet over medium. Add the ground beef and cook, breaking it up with a spatula, until no pink remains and it’s nicely browned (about 5–8 minutes). Drain excess fat if desired.
  2. Stir in the taco seasoning and 1–2 tablespoons of water. Cook for 1–2 minutes, stirring to coat the beef evenly and allow seasoning to become fragrant.
Warming the Taco Shells
  1. While the beef cooks, warm the taco shells according to package instructions. Soft tortillas can be warmed in a hot, dry skillet for 15–30 seconds per side.
Assembling the Tacos
  1. Spoon the seasoned beef into each taco shell. Work quickly if using hard shells to maintain their crispness.
  2. Top with shredded cheese, then add shredded lettuce, diced tomato, and pickles if desired.
  3. Serve with small bowls of ketchup and mustard for dipping or drizzling.

Notes

For a lighter or vegetarian option, swap ground beef with ground turkey or plant-based crumbles. Mix a splash of heavy cream into the warmed beef for extra cheesiness. Store leftover beef in an airtight container in the refrigerator for up to 3–4 days.
