- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until it is browned. Make sure to drain any excess fat.
- Add the chopped onion and minced garlic to the skillet, cooking until the onion is translucent and fragrant.
- Stir in black beans, cheese tortellini, enchilada sauce, cumin, chili powder, salt, and pepper. Mix well and heat the mixture through.
- Transfer everything to a baking dish and sprinkle with shredded cheddar cheese.
- Bake in the preheated oven for about 20-25 minutes or until the cheese is bubbly and golden brown.
- Garnish with fresh cilantro if desired before serving.
Notes
For extra flavor, try adding a drizzle of sour cream or hot sauce when serving. You can also top your dish with crushed tortilla chips before baking.
