  • 1 can black beans, drained and rinsed Can substitute with pinto beans.
  • 2 cups cheese tortellini Cook tortellini according to package instructions.
  • 2 cups enchilada sauce
  • 1 cup shredded cheddar cheese For topping.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Fresh cilantro for garnish (optional) Adds freshness to the dish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until it is browned. Make sure to drain any excess fat.
  3. Add the chopped onion and minced garlic to the skillet, cooking until the onion is translucent and fragrant.
  4. Stir in black beans, cheese tortellini, enchilada sauce, cumin, chili powder, salt, and pepper. Mix well and heat the mixture through.
  5. Transfer everything to a baking dish and sprinkle with shredded cheddar cheese.
  6. Bake in the preheated oven for about 20-25 minutes or until the cheese is bubbly and golden brown.
  7. Garnish with fresh cilantro if desired before serving.

Notes

For extra flavor, try adding a drizzle of sour cream or hot sauce when serving. You can also top your dish with crushed tortilla chips before baking.
