  • 1 lb chicken breast, cooked and shredded Using rotisserie chicken can save time.
  • 2 cups cooked rice Any type of cooked rice will work.
  • 2 cups broccoli florets, steamed Frozen broccoli can be used, just steam before mixing.
  • 1 can cream of chicken soup Can be substituted with cream of mushroom for a vegetarian option.
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or your choice) Feel free to experiment with different cheeses.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup additional shredded cheese for topping

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, cooked rice, steamed broccoli, cream of chicken soup, sour cream, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly coated.
  3. Transfer the mixture into a greased 9×13 inch baking dish.
  4. Top with the additional shredded cheese.
Baking
  1. Bake in the preheated oven for about 25-30 minutes, or until the cheese is melted and bubbly.
  2. Let it cool for a few minutes before serving.

Notes

Leftovers can be stored in an airtight container in the refrigerator for about 3-4 days or frozen for up to 3 months. Reheat thoroughly before serving. Consider adding paprika or cayenne pepper for extra flavor.
