  • 2 cups pasta (penne or rotini)
  • 1 lb chicken breast, diced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional) Great for presentation

Method
 

Cooking
  1. In a large skillet, heat olive oil over medium heat. Add the diced chicken and season with garlic powder, salt, and pepper. Cook until browned and cooked through, about 5-7 minutes.
  2. Add the pasta to the skillet along with the chicken broth and heavy cream. Bring to a simmer and cook until the pasta is al dente, which will take about 10-12 minutes while stirring occasionally.
  3. Once the pasta is cooked, remove from heat and stir in the shredded cheese until it’s melted and creamy.
  4. Serve hot, garnished with fresh parsley if desired.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze for up to three months. Reheat in a skillet, adding a splash of chicken broth or cream if necessary.
