Preparation
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the cherries, sugar, cornstarch, lemon juice, vanilla extract, and salt. Mix well and let this mixture sit for about 15 minutes.
- Roll out the pie crusts, placing one in a pie dish. Pour the cherry mixture into the crust and dot it with butter.
- Cover with the top crust, sealing the edges carefully. Make sure to cut slits in the top crust to allow steam to escape.
Baking
- Bake for 15 minutes at 425°F (220°C). Then reduce the temperature to 350°F (175°C) and bake for an additional 35-40 minutes, or until the crust is golden and the filling is bubbly.
Cooling
- Allow your pie to cool before serving.
Notes
Cherry pie is great on its own or served with vanilla ice cream or whipped cream. To preserve freshness, store in the refrigerator covered with plastic wrap or foil, best enjoyed within 3-4 days.
