Ingredients
  

For the Chicken
  • 2 cups cooked chicken, diced Use rotisserie, poached, or leftover roast.
  • 1 cup shredded cheese (cheddar, pepper jack, Monterey Jack, or Mexican blend) A blend melts best.
  • to taste taco seasoning Store-bought or homemade.
For Assembly
  • 8 pieces taco shells or tortillas Use hard shells for crunch or flour/corn tortillas for softer tacos.
  • optional various toppings (shredded lettuce, diced tomatoes, sour cream, salsa, sliced avocado or guacamole) Customize to taste.

Method
 

Preparation
  1. Place the diced cooked chicken in a medium bowl and sprinkle with taco seasoning. Toss until the chicken is evenly coated.
  2. Heat a skillet over medium and add 1 teaspoon of oil or a splash of water. Add the seasoned chicken and warm, stirring occasionally, for 3–4 minutes. Taste and add more seasoning if needed.
  3. Preheat the oven to 375°F (190°C).
Assembly
  1. Arrange taco shells or tortillas on a baking sheet. Divide the warmed chicken among them.
  2. Sprinkle roughly 2 tablespoons of shredded cheese over each taco.
Cooking
  1. Bake for 8–12 minutes, until the cheese is melted and bubbly and the shells are warmed through.
  2. Remove from the oven, add desired toppings (lettuce, tomato, sour cream, salsa, avocado), and serve immediately.

Notes

Keep steps short and use a hot oven for quick melting. For crispier shells, broil for 1 minute at the end—watch closely to avoid burning. Store leftovers separately in airtight containers, and reheat the chicken properly before serving.
