  • 2 slices slices bread (sourdough, whole wheat, or sandwich loaf)
  • 1 cup cooked chicken, shredded (rotisserie or leftover roast chicken works great)
  • 1 ripe avocado mashed
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon mayonnaise (optional, for extra creaminess)
  • Salt and pepper to taste
  • Butter for grilling (or olive oil for a lighter option)

Preparation
  1. In a medium bowl, mash the avocado with a fork.
  2. Add the shredded chicken and stir until evenly mixed.
  3. Stir in the tablespoon of mayonnaise if using. Season with salt and pepper to taste.
Cooking
  1. Warm a skillet over medium heat. Add a little butter or oil to the pan if needed.
  2. Spread butter on one side of each slice of bread. Place one slice butter-side down in the skillet.
  3. On the unbuttered side of the bread in the pan, spread the chicken-avocado mixture evenly. Sprinkle the shredded cheese over the mixture.
  4. Place the second slice of bread on top, butter-side up. Grill 3-4 minutes per side, pressing gently with a spatula, until bread is golden and cheese is melted.
  5. Remove from pan, let rest 1 minute, cut in half, and serve warm.
