  • 1 can chickpeas, drained and rinsed
  • 2 medium beets, cooked and diced Pre-cooked beets available for convenience.
  • 1 cup vegan feta cheese, crumbled Can substitute with traditional feta if preferred.
  • 1/4 cup red onion, finely chopped
  • 2 tablespoons olive oil Adjust according to taste.
  • 2 tablespoons balsamic vinegar Adjust according to taste.
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

Preparation
  1. In a large bowl, combine the chickpeas, diced beets, and red onion.
  2. Next, add the crumbled vegan feta to the bowl.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper until well combined.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Garnish with fresh parsley and serve immediately, or chill in the fridge for 15 minutes before serving.

Notes

Pairs well with grilled chicken or whole grains like quinoa or brown rice. Can add olives or sprinkle sunflower seeds for extra flavor.
