Main Ingredients
  • 2 cups cooked rice Use day-old rice for better frying
  • 1 cup mixed vegetables (peas, carrots, bell peppers) Feel free to substitute with other favorite veggies
  • 1 cup cooked chicken (diced) Can be substituted with shrimp or tofu
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil Adds authentic flavor
  • 2 pieces green onions (sliced) For garnish
  • 1 piece egg (optional) For extra protein
  • to taste salt and pepper

Method
 

Cooking Steps
  1. In a large skillet, heat the sesame oil over medium heat until it's shimmering.
  2. Add the mixed vegetables and cook them until they’re just tender.
  3. Push the veggies to one side of the skillet and add the diced chicken.
  4. If using an egg, scramble it on the empty side until cooked through.
  5. Stir in the cooked rice and pour the soy sauce over the entire mixture, combining everything thoroughly.
  6. Season with salt and pepper to taste. Garnish with sliced green onions before serving.

Notes

Store leftovers in airtight containers in the refrigerator for up to 3 days or freeze for up to a month. Reheat in a skillet or microwave before serving.
