Ingredients
  

For the crust
  • 24 pieces Oreo cookies Crushed for the crust
  • 1/2 cup Butter Melted
For the filling
  • 16 oz Cream cheese Room temperature
  • 1/2 cup Sugar
  • 2 pieces Eggs
  • 1 teaspoon Vanilla extract
  • 1 cup Chocolate chips Melted
For the ganache
  • 1/2 cup Heavy cream
  • 1 cup Chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Crush the Oreo cookies and combine them with the melted butter to form the crust. Press this mixture into the bottom of your baking pan.
  3. In a mixing bowl, whip together the cream cheese, sugar, eggs, and vanilla extract until the mixture is smooth.
  4. Fold in the melted chocolate chips carefully, then pour the creamy filling over the crust.
Baking
  1. Bake the bars for about 25-30 minutes, or until the center is set.
Cooling and Ganache
  1. Allow the bars to cool completely, then refrigerate them for a few hours.
  2. For a luscious ganache, heat the heavy cream and pour it over the chocolate chips, stirring until smooth.
  3. Spread the ganache over the cooled cheesecake bars and refrigerate until it is set.
  4. Cut into bars and serve!

Notes

Store cheesecake bars in an airtight container in the refrigerator for up to five days. For longer storage, wrap bars individually and freeze.
