Ingredients
  

Pudding Base
  • 1 cup coconut milk Use canned or carton coconut milk
  • 1/4 cup chia seeds These will expand to thicken the pudding
  • 2 tablespoons sweetener (honey, maple syrup, or agave) Customize to taste
Toppings
  • 1/2 cup fresh mango, diced For topping; can be substituted with other fruits
  • 2 tablespoons toasted coconut Adds crunch and flavor

Method
 

Preparation
  1. In a bowl, combine the coconut milk, chia seeds, and your chosen sweetener. Stir well to ensure everything is evenly mixed.
  2. Let the mixture sit for about 5 minutes, and then stir again to prevent clumping of the chia seeds.
  3. Cover the bowl and refrigerate it for at least 1-2 hours, or until the pudding has thickened to your desired consistency.
  4. Once thickened, serve the chia pudding in bowls, topped with the fresh mango and toasted coconut for an extra crunch.

Notes

Store the pudding in an airtight container in the refrigerator for up to 5 days. You can also freeze it in an ice cube tray for portioned servings. Stir the pudding after a few minutes to prevent clumping.
