  • 1 cup cookie butter
  • 1/2 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the cookie butter, brown sugar, and granulated sugar until well combined.
  3. Beat in the softened butter, then add the egg and vanilla extract, mixing until smooth.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Scoop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, spacing them apart.
  7. Bake for 10-12 minutes until the edges are golden and the centers are chewy.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to a week. For longer storage, freeze in a labeled bag. Make sure the butter is softened but not melted for the perfect texture.
