  • 1 cup whole milk You may substitute with almond milk or coconut milk.
  • 3/4 cup sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon For added flavor.
  • 1 cup crushed Biscoff cookies
  • 1/2 cup cookie butter Swirled in at the end.

Preparation
  1. In a bowl, whisk together heavy cream, whole milk, sugar, vanilla extract, and cinnamon until the sugar has dissolved.
  2. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions.
  3. In the last few minutes of churning, add the crushed Biscoff cookies to the mix.
  4. Transfer the churned ice cream to a container, swirling in the cookie butter.
  5. Freeze for at least 4 hours until firm.

Notes

Store in an airtight container in the freezer. To prevent ice crystals, press a sheet of parchment paper against the surface of the ice cream.
