Ingredients
  

Pasta and Vegetables
  • 8 oz fettuccine or pasta of choice
  • 2 cups broccoli florets
Creamy Sauce
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 cup vegetable broth
  • 1/2 cup nutritional yeast
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
Garnish
  • Fresh parsley for garnish

Method
 

Cooking Pasta and Broccoli
  1. Cook the pasta according to package instructions. In the last three minutes of cooking, add the broccoli florets to the boiling water. Once cooked, drain the pasta and broccoli, then set aside.
Making the Creamy Sauce
  1. In a blender, combine the drained white beans, vegetable broth, nutritional yeast, garlic, olive oil, salt, and pepper. Blend until the mixture is smooth and creamy.
  2. In a medium pan, heat the blended bean mixture over medium heat until warmed through.
Combining Ingredients
  1. Add the cooked pasta and broccoli to the creamy sauce and toss gently to combine.
  2. Serve hot, garnished with fresh parsley for an extra touch of flavor.
