  • 2-3 medium medium sweet potatoes (about 1.5-2 pounds), scrubbed
  • 2 tablespoons olive oil (substitute avocado oil for a higher smoke point)
  • 1 teaspoon garlic powder (or 1/2 teaspoon granulated garlic)
  • 1 teaspoon paprika (smoked paprika for a deeper flavor)
  • 1/2-3/4 teaspoon salt, to taste
  • 1/4 teaspoon black pepper
  • 1 teaspoon cornstarch (optional, for extra crispiness) Toss the cut fries in cornstarch for extra-crisp fries.
  • 1/4 teaspoon cayenne or chipotle powder (optional, for heat) Add for a spicy kick.

Preparation
  1. Preheat your oven to 425°F (220°C). Place a baking sheet in the oven to warm—this jump-starts the roasting.
  2. Cut the sweet potatoes into thin, even fries (about 1/4-inch thick) to ensure uniform cooking.
  3. In a large bowl, toss the fries with olive oil, garlic powder, paprika, salt, and pepper until every piece is lightly coated.
  4. Spread the fries in a single layer on the preheated baking sheet, giving them space to roast instead of steam.
Baking
  1. Bake for 25–30 minutes, flipping once about halfway through until you see golden edges and a slightly darker hue on the tips.
  2. Remove from the oven and serve hot.

Notes

Serve these fries straight from the oven with a dipping trio, or enjoy them with grilled burgers or spicy chicken sweet potato curry. For leftovers, cool fries to room temperature and store in an airtight container in the refrigerator for up to 3–4 days. Reheat in a hot oven for crispiness.
