Preparation
- Lightly grease a slow cooker with nonstick spray.
- Add the stew meat and sprinkle the Italian seasoning, garlic powder, salt, and pepper over the meat; toss to combine.
- Toss in the mushrooms, beef broth, Dijon mustard, and Worcestershire sauce.
- Cover and cook on low for 7-8 hours.
Finishing Touches
- Thirty minutes before serving, remove 1/2 cup of the broth and whisk in the EZ Gel or cornstarch.
- Slowly pour this mixture back into the slow cooker.
- Add the cream cheese and sour cream to the slow cooker, stirring until well combined.
- Turn the slow cooker to high and let it cook for another 30 minutes or until the sauce has thickened.
- While the stroganoff is finishing up, cook the noodles according to package instructions.
- Stir the noodles into the slow cooker, or serve them separately in bowls and ladle the stroganoff over the top before garnishing with fresh thyme and parsley.
Notes
For best results, sear the beef on the stovetop before adding it to the slow cooker. Consider adding fresh herbs or swapping out the sour cream for Greek yogurt for a different flavor profile.
