  • 1/2 cup black olives (sliced) Chose your favorite variety of olives.
Dressing ingredients
  • 2 tablespoons olive oil Extra virgin olive oil is preferred.
  • 1 tablespoon lemon juice Adjust to taste.
  • to taste salt and pepper Use fresh ground for best flavor.
Optional ingredients
  • 1 tablespoon fresh dill Add for extra flavor.

Method
 

Preparation
  1. Slice the cucumbers into thin rounds or half-moons.
  2. In a large mixing bowl, combine the sliced cucumbers, crumbled feta cheese, and sliced olives.
  3. In a small bowl, whisk together the olive oil and lemon juice with a pinch of salt and pepper.
  4. Drizzle the dressing over the cucumber mixture and gently toss to combine.
  5. Chill the salad in the refrigerator for at least 30 minutes to enhance the flavors.
