  • 2 breasts poached chicken breasts Poached for best flavor.
  • 4 cups chicken broth Can be substituted with vegetable broth for a vegetarian option.
  • 2 carrots diced
  • 2 stalks celery diced
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 cup green beans chopped
  • 1 cup kale or spinach For added nutrients.
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • to taste Salt and pepper
  • optional Fresh herbs for garnish

Method
 

Preparation
  1. In a large pot, heat some oil over medium heat and sauté the onions and garlic until they are translucent.
  2. Add the diced carrots, celery, and green beans, cooking until they start to soften.
  3. Pour in the chicken broth and bring the mixture to a boil.
  4. Add the poached chicken breasts and reduce the heat to a simmer.
  5. Stir in the thyme, rosemary, and kale (or spinach).
  6. Let the soup simmer for about 20-30 minutes, allowing the flavors to meld together.
  7. Season the soup with salt and pepper to taste.
  8. Serve hot, garnished with fresh herbs if desired.

Notes

For a thicker soup, consider adding some diced potatoes or a splash of cream. This soup freezes well, making it perfect for meal prep.
