  • 1/4 cup raisins Optional, for added sweetness.
  • 1/4 cup Greek yogurt Use low-fat for reduced calories.
  • 1 tablespoon honey Add more for sweeter flavor if desired.
  • 1 tablespoon lemon juice Freshly squeezed is preferred.
  • to taste salt and pepper Adjust according to preference.

Method
 

Preparation
  1. In a large bowl, combine the diced apples and chopped walnuts.
  2. In a separate small bowl, mix together the Greek yogurt, honey, lemon juice, salt, and pepper to create the dressing.
  3. Pour the dressing over the apple and walnut mixture and toss to combine.
  4. If using, add raisins and mix gently.
  5. Serve immediately or chill in the refrigerator for 10 minutes before serving.

Notes

To keep your salad fresh, store leftovers in an airtight container in the refrigerator and enjoy within a couple of days. Wait to add the dressing until just before serving to maintain the crisp texture of the apples.
