Dry Ingredients
  • 3 cups oat flour Make sure it's finely ground.
  • 1/2 teaspoon ground cinnamon
Wet Ingredients
  • 2/3 cup canned pumpkin puree
  • 4 tablespoons creamy peanut butter
  • 2 large eggs

Method
 

Preparation
  1. Preheat your oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the pumpkin puree, peanut butter, and eggs. Mix until thoroughly combined.
  3. In a separate bowl, mix the oat flour and ground cinnamon together.
  4. Gradually add the dry ingredients to the wet mixture, stirring until a thick dough forms.
  5. Roll out the dough to about ½ inch thickness and cut out shapes using cookie cutters.
Baking
  1. Place the cutouts on the prepared baking sheet and bake for 30-40 minutes until crisp.
  2. Let them cool before transferring to a cooling rack.
Storage
  1. Store in an air-tight container in the refrigerator for about a week or freeze for up to three months.

Notes

For the best texture, ensure that the oat flour is finely ground. Lightly toasting the oat flour before mixing in can enhance the flavor. You can add apple puree or different nut butters for variations.
