Ingredients
  

For the chicken
  • 4 pieces Chicken breasts Boneless and skinless
  • 1/4 cup Olive oil Extra virgin for better flavor
  • 1/4 cup Lemon juice Freshly squeezed
  • 2 cloves Garlic Minced
  • 1 tablespoon Oregano Dried or fresh
  • 1 teaspoon Salt To taste
  • 1 teaspoon Pepper To taste
For the bowls
  • 1 cup Quinoa or rice Cooked according to package instructions
  • 1 cup Cucumber Chopped
  • 1 cup Tomato Chopped
  • 1/2 cup Red onion Sliced
  • 1/2 cup Tzatziki sauce For drizzling
  • 1/2 cup Feta cheese Crumbled
  • 1/4 cup Fresh parsley Chopped, for garnish

Method
 

Preparation
  1. In a bowl, mix together olive oil, lemon juice, minced garlic, oregano, salt, and pepper to create your marinade.
  2. Add the chicken to the marinade and let it sit in the refrigerator for at least 30 minutes.
Cooking
  1. In a grill pan or skillet over medium heat, cook the marinated chicken until fully cooked, approximately 6-7 minutes per side depending on thickness.
  2. While the chicken is cooking, prepare your quinoa or rice according to package instructions.
Assembly
  1. Once the chicken is done, slice it into strips.
  2. To assemble the bowls, start with a layer of quinoa or rice, top with sliced chicken, add the chopped veggies, then drizzle with tzatziki sauce, and finish with a sprinkle of feta cheese and parsley.

Notes

These bowls are best served fresh but can also be plated creatively. Store leftovers separately from grains to maintain texture, use airtight containers in the fridge for up to three days.
