Ingredients
  

For the Cookie Dough
  • 1 cup creamy peanut butter Can be substituted with natural peanut butter
  • 1/2 cup unsalted butter, softened Ensure it's softened, not melted
  • 1 cup brown sugar Packed
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can substitute some with almond flour for a healthier option
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Add-ins
  • 1 cup mini marshmallows
  • 1/2 cup chocolate chips Can substitute with butterscotch chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the peanut butter, softened butter, brown sugar, and granulated sugar until the mixture is smooth.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture until just combined.
  5. Fold in the mini marshmallows and chocolate chips.
  6. Drop rounded tablespoons of dough onto parchment-lined baking sheets.
Baking
  1. Bake for 10-12 minutes, or until the edges are golden brown.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

These cookies pair wonderfully with a cold glass of milk or a cup of hot cocoa. Store in an airtight container at room temperature or freeze for longer storage.
