Ingredients
  

For the Sausage
  • 1 lb smoked sausage or Italian sausage, sliced into bite-sized pieces Use pre-cooked or smoked sausages for best results.
  • 3 tbsp butter For sausage garlic butter.
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • Fresh parsley, chopped For garnish.
  • Salt and pepper to taste
For the Pasta
  • 12 oz pasta (fettuccine, penne, or your favorite)
  • 2 tbsp butter For sauce.
  • 1 ½ cups heavy cream
  • 1 cup grated Parmesan cheese Freshly grated preferred.
  • 1 tsp garlic powder
  • ½ tsp black pepper
  • Salt to taste
  • Fresh parsley For garnish.

Method
 

Preparing the Garlic Butter Sausage Bites
  1. Heat 1 tbsp olive oil in a large skillet over medium heat.
  2. Add sliced sausage in a single layer. Cook for 4-5 minutes, flip, and brown the other side until nicely caramelized. Remove sausage to a plate.
  3. Reduce heat to medium-low. Add 3 tbsp butter to the same skillet and melt.
  4. Add minced garlic and cook for 1-2 minutes, stirring, until fragrant but not browned.
  5. Return sausage to the pan. Toss in the garlic butter to coat evenly.
  6. Sprinkle with 1 tsp Italian seasoning, salt, and pepper to taste. Toss once more.
  7. Remove from heat and sprinkle with chopped parsley.
Cooking the Pasta and Creamy Parmesan Sauce
  1. Bring a large pot of salted water to a boil. Add 12 oz of pasta and cook until al dente per package directions. Reserve ¼ cup of pasta water, then drain.
  2. In a large saucepan over medium heat, melt 2 tbsp butter.
  3. Pour in 1 ½ cups heavy cream and stir in 1 tsp garlic powder. Warm until just simmering — do not boil.
  4. Reduce heat to low. Gradually whisk in 1 cup grated Parmesan until the sauce is smooth. If it seems too thick, whisk in a spoonful of reserved pasta water to loosen.
  5. Season with ½ tsp black pepper and salt to taste.
  6. Add pasta to the sauce and toss until fully coated.
Serving
  1. Plate a nest of creamy Parmesan pasta.
  2. Spoon garlic butter sausage bites over the pasta.
  3. Garnish with extra Parmesan and chopped parsley. Serve hot.
