Ingredients
  

For the Wraps
  • 2 cups shredded chicken Can use shredded rotisserie chicken.
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 medium red onion, thinly sliced
  • 1/2 cup Greek yogurt Can substitute with coconut yogurt for a dairy-free option.
  • 1 teaspoon lemon juice
  • 1 teaspoon garlic powder
  • to taste Salt
  • to taste Pepper
  • 4 large wraps or tortillas Can use gluten-free tortillas.
  • as needed Fresh lettuce or spinach

Method
 

Preparation
  1. In a bowl, combine the shredded chicken, diced cucumber, cherry tomatoes, and red onion.
  2. In a separate small bowl, mix Greek yogurt, lemon juice, garlic powder, salt, and pepper.
  3. Pour the yogurt mixture over the chicken and veggies and stir to combine thoroughly.
Assembly
  1. Lay out the wraps or tortillas, placing a layer of fresh lettuce or spinach on each.
  2. Spoon the chicken mixture onto the lettuce, then wrap tightly.
  3. Cut in half and serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days. For longer storage, consider freezing the chicken mixture and thawing it when you’re ready to prepare the wraps.
