  • 1 cup cottage cheese Use small-curd for a smoother texture; full-fat or low-fat both work.
  • 4 large eggs Use fresh eggs.
  • 1/2 cup chopped spinach Can use fresh or well-drained frozen.
  • 1/2 cup diced bell peppers Any color.
  • 1/4 cup shredded cheese Optional — cheddar, Swiss, or mozzarella.

  • as needed Cooking spray or oil For greasing the muffin tin.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C) and grease a standard 12-cup muffin tin with cooking spray or oil.
  2. Crack the eggs into a mixing bowl, add the cottage cheese, and whisk until homogenous and slightly frothy.
  3. Fold in the chopped spinach, diced bell peppers, and shredded cheese (if using). Season with salt and pepper.
  4. Spoon or pour the mixture into the prepared muffin cups, filling each about three-quarters full.
Baking
  1. Bake on the center rack for 20–25 minutes, or until set and lightly golden on top. A toothpick inserted should come out clean.
  2. Cool in the tin for 5 minutes, run a knife around edges and remove.

Notes

Serve warm with avocado or plain Greek yogurt. Refrigerate for up to 4 days. For freezing, place bites on a parchment-lined tray until solid, then transfer to a freezer bag; good for up to 3 months.
