  • 12 oz Lasagna noodles Use regular or gluten-free noodles.
  • 2 cups pumpkin puree Canned or homemade.
  • 2 cups fresh spinach Can use frozen, thawed and drained.
  • 1 cup ricotta cheese For creamy texture.
  • 1 cup mozzarella cheese, shredded For layering and topping.
  • 1/2 cup Parmesan cheese, grated For layering and topping.
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper Adjust according to preference.
  • 1 tablespoon Olive oil For greasing the baking dish.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions, then drain and set aside.
  3. In a bowl, mix together the pumpkin puree, ricotta cheese, garlic powder, Italian seasoning, salt, and pepper until well combined.
  4. Spread a small amount of olive oil in a baking dish to prevent sticking.
Layering
  1. Layer the cooked noodles, followed by a portion of the pumpkin mixture, fresh spinach, and some mozzarella cheese.
  2. Repeat the layering process until all ingredients are used up, finishing with the noodles on top.
Baking
  1. Sprinkle any remaining mozzarella and Parmesan cheese over the top layer.
  2. Cover the dish with foil and bake for 25 minutes.
  3. Remove the foil and bake for another 15 minutes, or until the cheese is bubbly and golden.
  4. Let the lasagna cool for a few minutes before slicing and serving.

Notes

For extra creaminess, consider adding a layer of béchamel sauce. You can also substitute mozzarella for a dairy-free cheese if desired. Experiment with other vegetables like mushrooms or zucchini for added flavor.
