- Soak the glass noodles in hot water for about 10 minutes or until they are soft. Drain and set aside.
- In a large skillet or wok, heat the vegetable oil over medium heat.
- Add the minced garlic and onion, and sauté until the onion is translucent.
- Add the bell pepper, carrot, and snap peas. Stir-fry for about 5 minutes until the vegetables are tender-crisp.
- Add the softened glass noodles to the pan along with the soy sauce and lime juice. Toss everything together until well combined.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.
Notes
For presentation, consider plating the stir fry in a large bowl, garnished with fresh cilantro and a wedge of lime on the side. This dish pairs well with a light cucumber salad or steamed jasmine rice. Leftovers can be stored in an airtight container in the fridge for up to 3 days, and can be reheated with a splash of water or broth.
