  • 200 g glass noodles Soaked in hot water until soft
  • 1 tablespoon vegetable oil For sautéing
  • 1 clove garlic, minced
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 100 g snap peas
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • Fresh cilantro, for garnish
  • Salt and pepper to taste

Method
 

Preparation
  1. Soak the glass noodles in hot water for about 10 minutes or until they are soft. Drain and set aside.
  2. In a large skillet or wok, heat the vegetable oil over medium heat.
  3. Add the minced garlic and onion, and sauté until the onion is translucent.
  4. Add the bell pepper, carrot, and snap peas. Stir-fry for about 5 minutes until the vegetables are tender-crisp.
  5. Add the softened glass noodles to the pan along with the soy sauce and lime juice. Toss everything together until well combined.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh cilantro.

Notes

For presentation, consider plating the stir fry in a large bowl, garnished with fresh cilantro and a wedge of lime on the side. This dish pairs well with a light cucumber salad or steamed jasmine rice. Leftovers can be stored in an airtight container in the fridge for up to 3 days, and can be reheated with a splash of water or broth.
