- Stir in the garlic and oregano, cooking for another minute to release the flavors.
- Add the diced tomatoes and broth, bringing the mixture to a boil.
- Once boiling, add the orzo pasta and reduce heat to a simmer. Cook for 8-10 minutes until the orzo is al dente.
- Season with salt and pepper to taste.
- Serve hot and garnish with fresh parsley.
Notes
To store leftovers, let the soup cool down completely before transferring it to an airtight container. It will keep in the fridge for up to three days. For longer storage, you can freeze individual portions.
