  • 1 cup orzo pasta
  • 4 cups chicken or vegetable broth Can use homemade broth for richer flavor.
  • 1 cup diced tomatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • for garnish Fresh parsley Chopped fresh parsley for serving.

Method
 

Preparation
  1. In a large pot, heat some oil over medium heat. Add the onion, carrots, and celery, cooking until soft (about 5-7 minutes).
  2. Stir in the garlic and oregano, cooking for another minute to release the flavors.
  3. Add the diced tomatoes and broth, bringing the mixture to a boil.
  4. Once boiling, add the orzo pasta and reduce heat to a simmer. Cook for 8-10 minutes until the orzo is al dente.
  5. Season with salt and pepper to taste.
  6. Serve hot and garnish with fresh parsley.

Notes

To store leftovers, let the soup cool down completely before transferring it to an airtight container. It will keep in the fridge for up to three days. For longer storage, you can freeze individual portions.
