  • 4 large large tortillas Choose your favorite type of tortilla.
  • 1 cup shredded cheese (cheddar or mozzarella) Use any melting cheese of your choice.
  • 1 cup bell peppers, chopped Any color works.
  • 1 cup spinach, chopped Fresh spinach is recommended.
  • 1 cup mushrooms, sliced Use your preferred variety of mushrooms.
  • 1 teaspoon olive oil For sautéing the vegetables.
  • to taste Salt and pepper Adjust according to your preference.

Method
 

Cooking
  1. Heat the olive oil in a skillet over medium heat.
  2. Add the chopped bell peppers, spinach, and sliced mushrooms; sauté until softened, about 5 minutes.
  3. Season the sautéed vegetables with salt and pepper to taste.
  4. Place a tortilla in the skillet, layer cheese and the sautéed vegetables on one half, then fold the other half over.
  5. Cook for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
  6. Repeat the process with the remaining tortillas.
  7. Cut into wedges and serve warm.

Notes

Serve with fresh salsa, guacamole, or sour cream. Best enjoyed warm. Store leftovers in an airtight container for up to 3 days.
