  • 8 oz pasta (your choice)
  • 1 lb ground turkey or beef Use lean meat for a healthier option.
  • 1 packet taco seasoning Choose your preferred brand.
  • 14 oz canned diced tomatoes
  • 1 cup corn (frozen or canned)
  • 1 cup black beans (cooked and drained)
  • 1 cup shredded cheese (cheddar or Mexican blend) Add more if desired for a cheesier dish.
  • 1 cup chicken or vegetable broth
  • to taste salt and pepper
  • chopped cilantro for garnish (optional)

Cooking
  1. In a large pan, heat over medium heat and brown the ground turkey or beef until fully cooked. Drain excess fat if necessary.
  2. Sprinkle in the taco seasoning and mix well to coat the meat.
  3. Pour in the diced tomatoes, corn, black beans, and broth; stir everything together.
  4. Add the pasta to the mixture, then bring it all to a boil.
  5. Once boiling, reduce the heat to a simmer, cover the pan, and cook until the pasta is tender, about 10-12 minutes.
  6. Stir in the shredded cheese until it melts and creates a creamy texture.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped cilantro if desired, and serve hot.

Notes

This dish can be served with fresh cilantro or avocado for a colorful presentation. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days or frozen for up to 2 months.
