  • 1 cup almond flour Can be substituted with gluten-free flour blend.
  • 1/2 cup oats Can be replaced with gluten-free oats.
  • 1/4 cup maple syrup Can be swapped with honey.
  • 1/4 cup coconut oil, melted Can be replaced with another oil.
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp cinnamon Optional, for honey cinnamon flavor.
  • 1/4 cup cocoa powder Optional, for cocoa flavor.
  • 1/4 cup mini chocolate chips Optional, for chocolatey chip flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix almond flour, oats, baking powder, and cinnamon (if making honey cinnamon).
  3. In another bowl, combine melted coconut oil, maple syrup, and vanilla extract.
  4. Gradually add the wet ingredients to the dry ingredients and mix until a dough forms.
  5. Divide the dough into three parts. Mix cocoa powder into one part for a cocoa flavor, and add mini chocolate chips into another part for a chocolate chip flavor.
  6. Roll out the dough and cut into teddy bear shapes, then place them on the baking sheet.
  7. Bake for 10-12 minutes until golden brown.
  8. Let them cool before serving.

Notes

Store in an airtight container at room temperature for up to a week, or freeze for up to three months. Add extra flavor with nutmeg or use a fork to design the cookies before baking.
