Ingredients
  

Main ingredients
  • 1 lb chicken breast, diced Use boneless skinless chicken breasts.
  • 2 pieces ripe avocados, diced Ensure avocados are perfectly ripe.
  • 2 cups cooked rice (white or brown) Brown rice can be used for a nuttier flavor.
Dressing ingredients
  • 1/4 cup honey
  • 1/4 cup lime juice Fresh lime juice is preferred.
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • to taste fresh cilantro for garnish Optional but recommended.

Method
 

Preparation
  1. Mix honey, lime juice, olive oil, salt, and pepper in a bowl to create your dressing.
Cooking
  1. Heat a skillet over medium heat and cook the diced chicken until fully cooked and golden brown.
  2. Once done, pour half of the dressing over the chicken and stir well to coat.
Assembly
  1. Layer cooked rice in serving bowls, top with honey lime chicken and diced avocado.
  2. Drizzle the remaining dressing on top and garnish with fresh cilantro if desired.

Notes

Add cotija cheese or diced tomatoes for extra flavor. Store leftovers in airtight containers and consume within three days. Reheat on the stovetop to maintain texture.
