Preparation
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Add onions and sauté until translucent.
- Stir in the sliced kielbasa and cook until browned.
- In a large bowl, combine the diced potatoes, cooked kielbasa mixture, shredded cheddar cheese, sour cream, and cream of mushroom soup. Mix well and season with salt and pepper.
- Pour the mixture into a greased baking dish and spread evenly.
- Cover with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.
- Let it cool for a few minutes before serving.
