  • 1 pound kielbasa sausage, sliced
  • 4 cups potatoes, peeled and diced
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 can cream of mushroom soup
  • 1 onion, diced
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add onions and sauté until translucent.
  3. Stir in the sliced kielbasa and cook until browned.
  4. In a large bowl, combine the diced potatoes, cooked kielbasa mixture, shredded cheddar cheese, sour cream, and cream of mushroom soup. Mix well and season with salt and pepper.
  5. Pour the mixture into a greased baking dish and spread evenly.
  6. Cover with foil and bake for 45 minutes.
  7. Remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.
  8. Let it cool for a few minutes before serving.
