Main Ingredients
  • 1 pound sausage (breakfast sausage or cocktail sausages) If using bulk sausage, remove from casings and roll into 1-1.5" balls.
  • 1 pound bacon Regular cut works well; thick-cut needs a little longer.
  • 1 tablespoon dried herbs (thyme or oregano)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper Adjust according to preference.
  • as needed toothpicks For securing the bites.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  2. In a medium bowl, combine the sausage, dried herbs, garlic powder, onion powder, and a pinch of salt and pepper. Mix until evenly seasoned.
  3. Form the sausage into bite-sized pieces — roughly 1 to 1¼ inches each if making from bulk sausage. If using cocktail sausages, skip this step.
  4. Cut bacon slices in half crosswise. Wrap one half-slice of bacon around each sausage piece and secure with a toothpick. Tuck the ends underneath so they don’t unravel.
  5. Arrange the wrapped bites on the prepared sheet, seam-side down and spaced so air can circulate.
Cooking
  1. Bake for 20–25 minutes, turning once halfway through to brown evenly, until the bacon is crispy and the sausage reaches 160°F (71°C).
  2. Remove toothpicks before serving, or leave them in for guests to grab.

Notes

These Kilted Sausage Bites are versatile; serve with whole-grain mustard, barbecue sauce, or as part of a brunch spread. They can be stored in the refrigerator for up to 3–4 days.
