Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
- In a medium bowl, combine the sausage, dried herbs, garlic powder, onion powder, and a pinch of salt and pepper. Mix until evenly seasoned.
- Form the sausage into bite-sized pieces — roughly 1 to 1¼ inches each if making from bulk sausage. If using cocktail sausages, skip this step.
- Cut bacon slices in half crosswise. Wrap one half-slice of bacon around each sausage piece and secure with a toothpick. Tuck the ends underneath so they don’t unravel.
- Arrange the wrapped bites on the prepared sheet, seam-side down and spaced so air can circulate.
Cooking
- Bake for 20–25 minutes, turning once halfway through to brown evenly, until the bacon is crispy and the sausage reaches 160°F (71°C).
- Remove toothpicks before serving, or leave them in for guests to grab.
Notes
These Kilted Sausage Bites are versatile; serve with whole-grain mustard, barbecue sauce, or as part of a brunch spread. They can be stored in the refrigerator for up to 3–4 days.
